Primeira confraria pública de avaliação e aprimoramento cervejeiro. Na edição de novembro, reunimos os amigos Pedro Braga, anfitrião; Herbert Schumacher, sócio proprietário da cervejaria Abadessa; Alaor Peruzzo, “dindo” e membro do Tcherveja; os “degustadores” Leandro Silveira, Fábio Losekann, e Domingos Nocchi; e este editor que vos escreve.&lt;/span&gt;&lt;/div&gt;&lt;span style="font-family:verdana;"&gt;&lt;div align="justify"&gt;&lt;span style="color:#000099;"&gt;.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;O cardápio da noite foi composto por quatro cervejas Eisenbahn e quatro queijos, que representaram os estilos mais variados, além dos mais preferidos. Todavia, por que Eisenbahn? &lt;/span&gt;&lt;a href="http://3.bp.blogspot.com/_BN_ftQhkENM/SSrhjPXCl9I/AAAAAAAABpI/BZLNTptS58M/s1600-h/05TD-CRUZADAS+1.jpg"&gt;&lt;/a&gt;&lt;span style="font-family:verdana;"&gt;Porque foi a primeira cervejaria que difundiu essa maravilhosa combinação. Ainda que, metade dos integrantes dessa avaliação do DEGUSTA participou conosco numa oficina de harmonização de cervejas e queijos, ministrada pelo próprio Juliano Mendes, ex-sócio-proprietário da Eisenbahn. As cervejas, assim como os queijos, são divididos em estilos que sinalizam as suas principais impressões. Nossa tabela tentou representar diferentes estilos de cervejas de alta e baixa fermentação com estabilidade organoléptica que favorecesse a experiência sensorial. Salientando distintos sabores como doce, salgado, amargo, ácido, e azedo, além de aromas e texturas distintas, seria mais preciso perceber as combinações e os contrastes com os diferentes queijos. Esses, representando suas principais segmentações como a densidade de queijos duros, semi-duros, semi-moles, e com fungo. Primeiramente, entendemos - “in memoriam” - que não existe combinação entre os sabores de queijos e vinhos. Logo, a cerveja é a bebida eleita para essa harmonização, geralmente por complementação de sabor, e às vezes por contraste, embora ainda haja uma terceira dimensão na união dos dois sabores.&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="color:#000099;"&gt;.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;A gordura do queijo é combatida pelo amargor e pela carbonatação da cerveja, que limpam a língua e o palato. Participam com essa característica, os perceptivos níveis de acidez e de álcool contidos na cerveja harmonizada. Portanto, essas quatro qualidades fazem a manutenção do paladar.&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="color:#000099;"&gt;.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;Com certeza, há um prazer maior no melhor casamento entre os diversos tipos de &lt;/span&gt;&lt;a href="http://www.sociedadebadenbaden.com.br/blog/geral/pao-e-leite-cerveja-e-queijo"&gt;&lt;span style="font-family:verdana;"&gt;cervejas e queijos&lt;/span&gt;&lt;/a&gt;&lt;span style="font-family:verdana;"&gt;. As tabelas divulgadas por cervejarias como a Eisenbahn indicam uma tendência regida pela maioria das opiniões, porém percebemos que as harmonizações com queijos devem possibilitar outras escolhas pessoais.&lt;br /&gt;&lt;span style="color:#000099;"&gt;.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:verdana;"&gt;Por último, embora participando de um processo avaliativo, sentimos a necessidade de que as harmonizações de cervejas com queijos não tenham só queijos. Identificamos um limite digestivo às características lácteas do queijo. Entendemos que em determinado momento, uma grande quantidade desse acompanhamento, torna a harmonização enfastiada. Assim, sugerimos uma quantidade muito reduzida de queijo, e até, a participação de outros acompanhamentos como pães e embutidos. A convite do amigo mestre-cervejeiro Carlos Bolzan, degustamos os três mais recentes dos sete rótulos: as premiadas Belgian Ale e Ilex, e a American Brown Ale. &lt;a href="http://1.bp.blogspot.com/_BN_ftQhkENM/SNFvB5VyIRI/AAAAAAAABYE/5s_Ghj-WdjY/s1600-h/telecerveja+(7).jpg"&gt;&lt;img id="BLOGGER_PHOTO_ID_5247097119226077458" style="FLOAT: right; MARGIN: 0px 0px 10px 10px; CURSOR: hand" alt="" src="http://1.bp.blogspot.com/_BN_ftQhkENM/SNFvB5VyIRI/AAAAAAAABYE/5s_Ghj-WdjY/s320/telecerveja+(7).jpg" border="0" /&gt;&lt;/a&gt;Aliás, essa última, a A.B.A. ainda não tem rótulo, pois até que esse fique pronto, segue vendida apenas na versão chope em barril. A fábrica de cerveja da Dado Bier é abrigada no histórico prédio das caldeiras, construído em 1916, no antigo complexo Renner, industria que teve até time de futebol, já extinto, que venceu o campeonato gaúcho de 1954 - o famoso “Papão de 54” – desbancando os dois rivais Porto Alegrense e Internacional. A estrutura da microcervejaria atende uma produção mensal de 60.000 litros e pode engarrafar uma garrafa a cada 2,5 segundos – que dizer que, no tempo da leitura dessa matéria, daria para encher a mesa de garrafas de cerveja... Primeira microcervejaria do Brasil, desde 1994, que leva como nome, o apelido mais o “apellido” de seu proprietário. Confuso? Desculpe-me... É o codinome (Dado) mais o sobrenome do Eduardo Bier Correa!&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:verdana;color:#000099;"&gt;.&lt;/span&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="font-family:verdana;"&gt;A convite do mestre cervejeiro Carlos Bolzan, serão degustados os seis tipos de cervejas regulares, e o da sazonal Dado ABA - American Brown Ale. Os seis rótulos de linha são as Dado Bier Original (pilsen), Royal Black (Bock), Ilex (frutada), de baixa fermentação; e Weiss (de trigo), Red Ale, Belgian Ale, de alta fermentação. Saindo excepcionalmente de sua guarida - o Armazém Bierkeller – visitamos a cervejaria Schincariol, filial Igrejinha\RS. Realmente uma indústria impressionante. Degustamos a Cristal; Celebration Verão; Weiss (então, lançamento); Golden; Red Ale; 1999; Celebration Inverno; e Stout. A potencialidade de aromas e paladar que o fermeno da nova Weiss desperta é insuperável. Em relação aos tipos diferentes de alta fermantação, Red Ale e Bitter Ale (1999), fizemos uma disputa por qualidade. Os degustadores já familiarizados promoveram um ambiente informal e acolhedor. Lamentavelmente o cervejeiro-proprietário da cervejaria Schmittbier, Gustavo Dal Ri, não pode comparecer para dirimir dúvidas das suas duas cervejas. Esse novo "braço" do clube cervejeiro gaúcho foi criado para desenvolver ações práticas, como degustações assistidas de cerveja, harmonizações zito-gastronômicas, e mini-cursos de consumo cervejeiro, na finalidade de promover um avançado conhecimento da bebida. Configura-se numa banca para classificar e avaliar cervejas e acompanhamentos, num ambiente propício para o lançamento e experimentação de novos produtos. O TCHERVEJA que, em função do colecionismo cervejeiro, vem desde 1994 participando da evolução das embalagens, paralelamente - e conseqüentemente - acompanhou o crescimento da cerveja no Brasil e no mundo nesse período. Ambos eventos são abertos ao público. Nas reuniões ordinárias do clube, onde o serviço é divulgado pelo sítio [&lt;/span&gt;&lt;a href="http://www.tcherveja.com.br/"&gt;&lt;span style="font-family:trebuchet ms;"&gt;www.tcherveja.com.br/&lt;/span&gt;&lt;/a&gt;&lt;span style="font-family:trebuchet ms;"&gt;], qualquer pessoa interessada pode comparecer e conhecer as diligências debatidas pelos sócios e se tornar mais um membro do grupo. Já, para participar das degustações, é necessário efetuar reserva, pois existe um número máximo de vagas. Além de lançamentos de cervejas, com custo patrocinado ou subsidiado, a maioria das degustações é por adesão, em função da experimentação assistida de cervejas de mercado. O TCHERVEJA DEGUSTA torna-se, assim, a primeira confraria pública do Brasil específica à degustação de cervejas. A casa considerada um templo cervejeiro seguirá como sede da confraria. O júri, então composto só por tchervejeiros (sócios do TCHERVEJA), classificou-a - por unanimidade – como uma cerveja de padrão “A”. E, na avaliação as notas variaram entre 8 e 9. Como exemplo, citamos a nota 9,35 do presidente do clube cervejeiro gaúcho, Guilherme Da Costa Lopes.
